This is due to a logic problem within Plesk. In order for the Let's Encrypt certificate to be generated without any problems, you need to disable the "Permanent 301 redirection from HTTP to HTTPS suitable for SEO" (see image).

After you disable the redirection, you can have the certificate created again.
